'Cat Food' Brownies & Key Lime 'Slop' Bars

Last night I made brownies for the dinner party that Josh and I are having tonight. I tried the applesauce trick, where you sub that in for the oil. Also, I used egg beaters instead of the real deal. Yuck. They were rubbery and the taste was slightly off as well. So, they went into the garbage, because they were, as Alanna put it, like cat food - canned, not dry. I don't know if I should blame that on the apple sauce, the eggbeaters, or both. Reguardless, I wasnt about to put those out for guests!

Next, I made the boxed Key Lime Bars that Josh had picked out for the get together. Easy enough - pat the crust down, mix the powder with eggs and water, pour, bake. I don't know how they taste yet, but they look like goopy grossness and I am embarassed to serve them - still not sure if I will. Josh thinks they look good, mostly because they are edible.

At lunch today, I went to W*lmart and bought St. Pattys Day cupcakes. Although I am also embarassed to serve these because I am not a 'store bought' person, they are the lesser of the evils at this point. Lets cross our fingers and hope that the tacos turn out better! I'm not even a taco person (I used to hate them!) but this recipe from Josh's aunt is fantastic - you use less spice, and mix the meat with equal parts refriend beans. Then you put it into a tortilla and brown both sides before serving! Yum!

We must continue on our quest to create non-cat food, low fat brownies. I'm thinking AJ's babyfood trick might be the answer.

Hopefully you're party turned out ok. Ask AJ or Crystal for their healthy recipes...they always cook good stuff!!
